Ingredients
For the burgers
- 1 lb ground beef (80/20)
- 4 burger buns
- 4 slices American or cheddar cheese
- ½ small onion, thinly sliced
- Pickles, to taste
- Salt and black pepper
For the Pipo Perico Chipotle Sauce
- ¼ cup Chipotle Pipo Perico Hot Sauce
- ½ cup mayonnaise
- 1 tbsp fresh lime juice
- 1 tsp honey
- ½ tsp garlic powder
Directions
- Make the Pipo Perico Chipotle Sauce. In a small bowl, combine Chipotle Pipo Perico Hot Sauce, mayonnaise, lime juice, honey, and garlic powder. Mix until smooth and creamy. Set aside.
- Prepare the beef. Divide the ground beef into 4 equal portions and loosely shape into balls. Do not overwork the meat.
- Cook the smash burgers. Heat a cast-iron skillet or griddle over high heat. Place each beef ball on the hot surface and firmly smash into a thin patty. Season with salt and black pepper.
- Cook for 2–3 minutes, until the edges are browned and crispy. Flip each patty, add a slice of cheese, and cook for another 1–2 minutes.
- Toast the buns. Place the burger buns cut-side down on the skillet and toast until lightly golden.
- Assemble. Spread a generous amount of Chipotle Pipo Perico Hot Sauce on both sides of each bun. Add the smash burger, sliced onion, and pickles.
- Serve. Finish with an extra drizzle of Chipotle Pipo Perico Hot Sauce and serve immediately.
Pipo Tip: For even more smoky flavor, brush a little Chipotle Pipo Perico Hot Sauce directly onto the burger during the final minute of cooking.
