Spicy Mexican Street Corn Bites

Ingredients:

  • 2 tbsp Pipo Perico Hot Sauce
  • 2 cups corn kernels (fresh or frozen, grilled for extra flavor)
  • 2 tbsp mayonnaise
  • 2 tbsp sour cream
  • ½ cup cotija cheese (crumbled)
  • 2 tbsp fresh cilantro (chopped)
  • Juice of 1 lime
  • Tortilla chips (for serving)

Instructions:

  1. In a bowl, mix corn, mayonnaise, sour cream, lime juice, and cilantro.
  2. Add crumbled cotija cheese and stir until combined.
  3. Drizzle generously with Pipo Perico Hot Sauce and mix again.
  4. Serve spoonfuls of the mixture on top of tortilla chips for bite-sized snacks.
  5. Garnish with extra cheese and a squeeze of lime.
