Pipo Perico Mango-Chile Chicken Tacos

Ingredients

  • Pipo Perico Hot Sauce (Mild or Hot) — 3 tbsp

  • 2 chicken breasts, thinly sliced

  • 1 ripe mango, diced

  • 1/2 red onion, finely chopped

  • 1 lime (zest and juice)

  • 2 tbsp olive oil

  • 1 tsp chili powder

  • 1/2 tsp ground cumin

  • 8 small corn tortillas

  • Fresh cilantro, chopped

  • Sea salt & black pepper, to taste

Directions

  1. Toss chicken with 2 tbsp Pipo Perico, olive oil, chili powder, cumin, salt and pepper. Marinate 10 minutes.

  2. Sear in a hot skillet 4–5 minutes per side. Rest 2 minutes; slice.

  3. Mix mango, red onion, lime zest/juice, cilantro, and the remaining 1 tbsp Pipo Perico.

  4. Warm tortillas. Fill with chicken and mango salsa. Add extra Pipo Perico to taste.
